Experience the heartwarming flavours of a classic Irish stew, reimagined in a vegan-friendly way. This Vegan Irish Stew offers all the rich, comforting elements of the traditional dish—tender root vegetables, hearty potatoes, and savoury broth—without any animal products. Perfect for chilly days, this stew is a nourishing and satisfying option that celebrates the simplicity of wholesome ingredients. Mark made this for me when I asked him for it.

Ingredients
2 ONIONS - DICED
1 LEEK - DICED
Two Handfuls of Soya Chunks - We use the dried chucks from Holland & Barrett which means you have to soak them to use them.
3 CARROTS - SLICED
1/2 TURNIP - DICED
2 TBSP VEGAN GRAVY GRANULES
3 CUPS WATER
3 - 4 POTATOES - PEELED AND CUT IN QUARTERS
1 CUP RED WINE ( WE USE THE SMALL BOTTLES FROM LIDL FOR COOKING ) - Optional
GARLIC - DRIED OR 2 CLOVES MINCED
SALT AND PEPPER TO SEASON
1 tsp Mixed Herbs
The How to Bit
If you have Dry Soya Chunks, like us, pour boiling water over them cover them with a plate - leave them for 30mins and then drain them to use.
Place all the vegetables and soy chunks in the slow cooker and add the water, seasoning and wine - let it cook for a couple of hours.
After a couple of hours add the Vegan Gravy Granules and thicken as desired.
Leave for another hour.
Serve with Crusty White Bread
