This recipe takes a while so I usually start the dough the night before and let it rise overnight.
Dough:
1 cup unsweetened oat (or other non-dairy
1/4 cup vegan butter
3 cups self-raising flour
1/4 cup granulated sugar
1 packet (2 1/4 tsp) active dry yeast
1/2 tsp salt
Filling:
1/2 cup brown sugar
2 tbsp ground cinnamon
1/4 cup vegan butter, softened
Glaze:
1 cup Icing Sugar
1-2 tbsp non-dairy milk
1/2 tsp vanilla extract
1 Prepare the Dough:
- In a small saucepan, heat the oat milk and vegan butter over medium heat until the butter is melted and the mixture is warm but not hot (about 110°F).
- In a large mixing bowl, combine 2 1/2 cups of the flour, sugar, yeast, and salt.
- Pour the warm milk and butter mixture into the dry ingredients and mix until well combined.
- Gradually add the remaining flour, 1/4 cup at a time, until the dough pulls away from the sides
of the bowl. The dough should be soft but not sticky.
- Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
2. Prepare the Filling:
- In a small bowl, mix the brown sugar and cinnamon together.
- Punch down the risen dough and roll it out on a lightly floured surface into a 15x9 inch rectangle.
- Spread the softened vegan butter evenly over the dough, then sprinkle the cinnamon-sugar mixture on top.
3. Roll and Cut the Dough:
- Starting from the long edge, tightly roll the dough into a log.
- Cut the log into 12 equal pieces and place them in a greased 9x13 inch baking dish.
4. Second Rise:
Cover the rolls with a towel and let them rise for another 30 minutes.
5. Bake:
- Preheat the oven to 350°F (175°C).
- Bake the rolls for 25-30 minutes, or until golden brown.
6. Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar, non-dairy milk, and vanilla extract until smooth.
7. Glaze the Rolls:
- Drizzle the glaze over the warm cinnamon rolls before serving.
