Best Vegan Mac & Cheese in my opinion - Made by my husband! 🌱✨
This creamy, comforting, and totally dairy-free mac & cheese is an absolute game-changer. The sauce is rich and cheesy, with just the right amount of tang and creaminess to satisfy your cravings. Ingredients - serves 4
Macaroni Pasta - Aldi does a great one 300g does 4 people
1/2 punnet of baby plum tomatoes halved
2 cloves of garlic chopped
1/2 white onion diced
1/2 punnet Chestnut mushrooms - sliced
2- 3 tablespoons Nutritional Yeast
1 tsp Mustard
2 tablespoons Vegan Spread - we use Flora
Oat milk ( optional )
Cornflour
Mixed Italian Herbs
Salt and Pepper to taste
Gulg of Olive Oil
Vegan Cheese - Aldi does a great Cheddar alternative that melts really well
The How to Bit
In a pan put some Olive Oil and your baby plum tomatoes, mushrooms, and onion with the garlic and mixed Italian Herbs into a pan - cook until soft.
In another pot cook your Macaroni in boiling water with a pinch of salt until soft
Pour out the water from the cooked Macaroni and add to the pasta the cooked tomato, onions, and mushrooms and mix
Add the Nutritional Yeast, Mustard, and Flora to the pot and stir over heat until it makes a sauce. If you want a thicker sauce you can add some cornflour and Oat Milk.
Place Mac and Cheese in a Serving dish - Grate your Vegan Cheese over the top and place under the grill until the cheese melts
Serve with Garlic Bread - Lidl's own Brand of Garlic bread is Vegan-friendly
