Butternut squash and Sweet potato soup

This tasty soup is a doddle to make and so tasty on a cold day, especially if you buy frozen Butternut squash -if not the chopping will take a little time.

The How to Bit 

1. Melt butter in a pan and add oil.

2. Add onions to soften, then the sweet potato and butternut squash; stir for one minute or so.

3. Add stock and bring to a boil, turn down the heat, and simmer for around 45 minutes.

4. Add the Nutritional yeast for an extra cheesy taste boost 

5. Use a hand blender to blend all the ingredients (be careful as it will be hot) or leave it to cool before doing this step. Serve with crusty bread.
