I used to make this for my Girls in the summer; using your own home-grown strawberries makes it even better, as you know they haven't been treated with anything but love.
Ingredients
4 Ripe bananas, frozen slices- perfect for using up any that are getting too ripe
1/2 cup of sugar
Strawberries: I used a small carton's worth I would say, but we grow them in the garden
1/2 tsp Vanilla Essence
Coconut or Oat milk to loosen up the nice-cream
First, freeze your banana slices overnight - I just chop them up every time we have overripe ones and pop them in the freezer- great for smoothies, ice cream, and in recipes like Banana Bread
Place frozen banana slices and 2 tablespoons unsweetened oat or Coconut milk into a high-speed food processor or blender.
Blend on high for 1 to 2 minutes, stopping to scrape the sides every so often.
If your blender is having a hard time blending the bananas, add more almond milk by the tablespoon.
Once pureed together, your banana nice cream should be like a super thick smoothie or soft serve. Option to eat immediately or to transfer to a parchment-lined bread pan to freeze for later.
Freeze it like ice cream: Freeze banana nice cream for 1 to 2 hours so that it hardens enough to scoop like ice cream, but isn't too hard that you can't scoop it.
